Whether they make it or break it, it’s always the little things. Glad or sad, sometimes it doesn’t take much either way. The other day, this little jewel gave a LOT of people in my family a LOT of smiles and happiness. Remember this? You can find the recipe here. So, what are some of my favorite little things? ~ Clean sheets ~ Time alone ~ Snow (as reported here) ~ Cold weather (see above) ~ The smell of the piney woods on a cool day after an afternoon rain ~ A sincere compliment ~ Laughing. Big, deep belly laughs. ~ Puppy breath ~ Getting a drawer or paperwork organized ~ Checking things off my list ~ Taking a picture that makes people smile ~ Listening to Justin talk ~ The smell of bleach in the washer ~ Comfortable shoes ~ My sweat pants. Oh, how I love them! And I love a good sandwich with great condiments. Just that little extra flavor can do sooooo much. So, I had a lot of dill, oregano, thyme and a little basil that needed harvesting and decided some special mayonnaise was in order. HERB MAYO 1 1/2 cups mayo 2 Tbsp finely chopped fresh dill 1 Tbsp finely chopped fresh oregano 1 Tbsp finely chopped thyme 1 Tbsp finely chopped basil 1 shallot, finely chopped 1 garlic clove, finely chopped 1-2 Tbsp fresh lemon juice 1 tsp whole grain mustard Couple dashes of Tabasco Salt and fresh cracked pepper to taste Mix together and let chill for about an hour before serving. And, if you don’t have fresh herbs, dried herbs will always work – just be sure and cut back on the quantities a bit to compensate for the stronger herb flavors you get from the dried stuff. This stuff is really good AND really versatile. Here’s what I’ve used it for so far . . . Sandwich spread Savory chicken salad Egg Salad Tartar Sauce (just add a little dill pickle relish and some ketchup if you want) And next I’ll be trying this over a little steamed asparagus! I’m sure you can think of a million more dishes that could use a little extra flavor! So, what’s some of the little things that bring you pleasure? And let me know what else you might use this mayo for. Hugs, Suz
