While in Utah, I thought it would be fun to look up some of my favorite bloggers that live here. Katrina Scott Smith is an amazing baker with a great blog – Baking and Boys!, great recipes and a great personality – all rolled up into one. I was so thrilled when she said she would be able to meet up with me for lunch today. After reading my post On the Road: Salt Lake City and The Red Iguana she wanted to go give it a try. It was my best excuse to go back for seconds! Katrina had the Fish Tacos made with delicious fresh tuna. I made a vow that I was going to have something different from what I had when MM and I went. So, I had the Tapatio Plate (and NO breakfast so I could eat most of whatever I ordered), which included a shredded beef enchilada, chile relleno and beef flauta topped with sour cream and guacamole. All of it was just as good as I had hoped and the guacamole was very, very fresh and delicious. Now, back to Katrina. She is fun, smart, down-to-earth, and loves her family! They are still getting settled in the area after moving here from Kansas. She has four boys ages 12 to 3 – which keep her busy, busy, busy. But she still finds time to bake and cook and blog – of which I am very glad! With Halloween just around the corner, you have to take a look at some of her creativity that may help make you Halloween treats more fun than a belfry full of bats! Be sure and checkout Katrina’s Oreo Jack-O-Lantern Pops, made with Heads or Tails Double-Stuffed Oreos. Not only are they delicious but Oh So CUTE! Also, don’t miss the Ghostly Cocoa Puffs Cupcakes that will surely please and delight every little Trick-Or-Treater in your house – big and little! Me? I am quite sure we are going to have her Cookie Carnival—Chiquita Banana Breakfast Cookies and the Caramel-Banana Muffins. Katrina, being the great baker that she is, brought me something I’ve been wanting to try since I read about it on her blog.
